Well in this course chocolatier, Beth Klosterboer will teach you how to make the most exquisite chocolate truffles just like those you find in a candy shop.
PREREQUISITE: CHOCOLATE MAKING BASICS COURSE
In this one-hour video course, we'll start with the basics and you'll learn how to make silky chocolate ganache.
Chocolate ganache is the foundation for all truffles and Beth will share tips with you for making it smooth and creamy no matter what type of chocolate you use.
You'll learn a traditional method for making ganache as well as, an easy food-processor method and you'll get tips on flavoring it using liquor, spices, or toppings so you can make pretty rolled truffles.
Then once you’ve mastered that technique you'll move onto creating chocolate shells that will be filled with a soft and creamy chocolate ganache center. These candies will be created using polycarbonate candy molds so they’ll have a beautiful shine.
To make those truffles even more amazing you can decorate them using chocolate transfer sheets and Beth will show you how.
IN THIS COURSE YOU WILL LEARN HOW TO:
- make dark and milk chocolate ganache (directions for making white chocolate ganache will be included in the instructions packet for the course)
- flavor the ganache using liquors or spices
- create thick ganache to make rolled truffles
- roll the truffles in a variety of toppings like shaved chocolate, cocoa powder, freeze-dried fruit and more
- create chocolate shells using polycarbonate candy molds
- fill the chocolate shells with a soft ganache
- top the ganache with more chocolate to finish the candy pieces
- decorate the tops of your chocolate truffles using chocolate transfer sheets
PREREQUISITE: CHOCOLATE MAKING BASICS COURSE
- You will need to have a good working knowledge of how to melt and temper pure chocolate or how to melt compound chocolate, also known as Candy Melts, confectionery coating, melting wafers, or almond bark in order to be able to create the beautiful chocolate shells for the molded chocolate truffles so I recommend you take the Chocolate Making Basics course before you begin your Chocolate Truffles course.
